Chef Opel Khan
Chef Opel Khan is the epitome of Métisse. He is an acclaimed global chef and has been in the Australian food scene for over three decades. His extensive career spans over three decades and has travelled the globe researching, learning and experiencing the amazing food created by other chefs and local growers.
Throughout his travels, he has learned a lot about how different cultures incorporate flavours into their cuisine and how they bring people together. This was the inspiration behind Metisse. He has managed and consulted for over 20 restaurants throughout Australia, Asia and Europe.
The meaning of Métisse in french is mixed race, which encompasses Opel as a person and his inspiration for his food. Chef Opel is very hands on in his approach to both gastronomy and customer service. You will frequently find him interacting with guests, explaining the dishes and roaming the restaurant floor ensuring that everyone is looked after to the highest standard.
Opel is passionate about sustainability and educating others on how fine dining can be sustainable using the right techniques and care. Opel Khan currently has three incredible venues in Sydney, Metisse a french inspired fine dinning restaurant , Acqua E Farina an artisan pasta restaurant and Pizza Boccone with wood fried pizzas and antipasti.

Chef Lucinda Khan
Lucinda Khan is the youngest daughter of Opel and Julie Khan, she is also the youngest Head Chef in Sydney. She has been in the kitchen since she could stand, and learnt how to cook through watching and her parents in the kitchen and tasting their creations. As she got older, her passion for food grew and began creating her own recipes.
Luci is referred to as the ‘glue’ in the kitchen of Metisse, her calm and collected attitude shines through and in an integral part of the Metisse team. As a budding young female chef, she is always excited to trial new recipes and add a new generational twist onto some of the French classics Metisse showcases on the menu. During lockdown, Luci also opened Acqua E Farina with her dad, a local Artisan Pasta Restaurant in the heart of Potts Point.
